A hearty and satisfying chicken and rice casserole that’s quick, easy, and perfect for busy weeknights.

Ingredients

  • 2 cans Canned Chicken, drained
  • 1 can Cream of Chicken Soup
  • 1 cup Mixed Vegetables, frozen (medley of peas, carrots, and corn)
  • 1 cup Cooked Rice (white or brown)
  • 1 cup Shredded Cheese (cheddar works great)
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • Optional: Breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the drained canned chicken, cream of chicken soup, mixed vegetables, cooked rice, garlic powder, salt, and pepper in a large mixing bowl.
  3. Mix the ingredients until well combined.
  4. Prepare a greased casserole dish with cooking spray or butter.
  5. Spread the chicken and rice mixture evenly in the casserole dish.
  6. Add shredded cheese on top, and sprinkle breadcrumbs if desired.
  7. Bake for 25 to 30 minutes until cheese is melted and bubbly.
  8. Cool for a few minutes before serving.

Notes

Use quality canned chicken for best flavor. Customize vegetables and seasonings to your taste.
