A warm and comforting Crockpot potato soup that’s creamy, hearty, and perfect for chilly days.

Ingredients

  • 4 medium Potatoes, peeled and diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream (or half-and-half for a lighter option)
  • Salt and Pepper to taste
  • Optional toppings: Shredded cheese, crumbled bacon, sliced green onions

Instructions

  1. Prepare the Vegetables: Chop the potatoes and onion, and mince the garlic.
  2. Combine Ingredients: In your slow cooker, add the chopped potatoes, onion, minced garlic, and broth. Stir to combine.
  3. Add Seasoning: Season with salt and pepper according to your taste.
  4. Set and Forget: Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until potatoes are tender.
  5. Mash for Creaminess: Once cooked, use a potato masher to mash some of the potatoes for a thicker texture.
  6. Stir in the Cream: Stir in the heavy cream and heat through for another 10-15 minutes.
  7. Serve: Top with favorite optional toppings and enjoy!
