Chicken Broccoli Cheddar Pasta Casserole

A hearty and comforting casserole combining tender chicken, vibrant broccoli, and creamy cheddar cheese baked with whole wheat pasta.

Ingredients

  • 2 cups cooked chicken, diced
  • 2 cups fresh broccoli florets
  • 8 ounces whole wheat pasta
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s ready for baking.
  2. Boil a pot of salted water and cook the whole wheat pasta according to package instructions. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in the cooked chicken and broccoli. Cook until heated through, about 3–5 minutes.
  5. Add the drained pasta to the skillet with the chicken mixture. Stir in 1 ½ cups of cheddar cheese, mixing until well combined.
  6. Season with salt and pepper to taste. Mix thoroughly to ensure an even distribution of flavor.
  7. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  8. Sprinkle the remaining ½ cup of cheddar cheese on top of the mixture.
  9. Bake in the oven for 25–30 minutes or until the cheese is bubbly and golden brown.

Notes

You can use rotisserie chicken for a faster option. Fresh or frozen broccoli works well; steam frozen broccoli until tender if using.
