A wholesome lentil soup that’s packed with nutritious ingredients and comforting flavors, perfect for weeknight dinners.

Ingredients

  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables start to soften.
  2. Add garlic and spices: Add the minced garlic and ground cumin to the pot. Stir frequently for 1-2 minutes until fragrant.
  3. Combine lentils and broth: Add the rinsed lentils, vegetable broth, and bay leaf. Stir well to combine all ingredients.
  4. Simmer the soup: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Add greens: If you’re using spinach or kale, stir it into the soup during the last 5 minutes of cooking until just wilted.
  6. Season to taste: Remove and discard the bay leaf. Taste the soup and add salt and pepper as needed before serving.

This soup tastes even better the next day; perfect for meal prepping or batch cooking.
