Savory and hearty stuffed bell peppers packed with flavor and customizable filling options, perfect for meal prep and family dinners.

Ingredients

  • 4 large bell peppers
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds.
  3. Sauté the chopped onion and minced garlic in a skillet over medium heat until fragrant and translucent, about 3-4 minutes.
  4. Cook the ground meat in the skillet, breaking it apart until browned, and season with salt, pepper, and Italian seasoning.
  5. Combine the cooked rice and diced tomatoes with their juice into the meat mixture, mixing until well combined.
  6. Stuff each pepper with the filling mixture, leaving space at the top for cheese.
  7. Add shredded cheese on top of each stuffed pepper and pour a bit of water into the baking dish.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and the peppers are tender.
  9. Serve warm and enjoy!
