African Chicken Peanut Stew

A delightful blend of tender chicken, rich peanut butter, and vibrant vegetables, perfect for a comforting dinner or meal prep.

Ingredients

  • 1.5 lb chicken thighs
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1/2 cup tomato sauce
  • 1 red bell pepper, chopped
  • 1/2 cup peanut butter
  • 1/4 cup olive oil
  • 1/2 onion, chopped
  • 1 tsp cayenne pepper
  • 1 tsp bouillon powder
  • 2 cups chicken stock

Instructions

  1. Wash and pat the chicken thighs dry with paper towels. In a small bowl, mix salt and black pepper, then rub the mixture onto both sides of each chicken piece.
  2. Heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the chicken thighs and brown them for about 4-5 minutes on each side until golden. Once browned, remove the chicken from the skillet and set it aside.
  3. Pour in the remaining 1/4 cup of olive oil into a large soup pot. Heat the oil over medium heat. Add the chopped onion and red bell pepper, sautéing for about 5 minutes until they start to soften.
  4. Stir in the tomato sauce, cayenne pepper, and bouillon powder. Let the mixture simmer for 3-4 minutes to blend the flavors.
  5. Pour in the chicken stock and give it a good stir. Bring the mixture to a gentle simmer.
  6. Add the browned chicken thighs back into the pot. Let them simmer in the broth for about 10 minutes, allowing the flavors to meld.
  7. Taste the stew and add salt if necessary. Stir in the peanut butter until fully incorporated and let it cook for another 5-10 minutes.
  8. Serve warm with your choice of sides.

Notes

This stew can be stored in the fridge for up to 4 days or frozen for up to 3 months. Avoid microwaving to preserve texture.
