A creamy and comforting chili featuring tender chicken, rich cream cheese, and zesty spices, perfect for busy weeknights or cozy gatherings.

Ingredients

  • 1 pound chicken breast (boneless, skinless)
  • 1 can kidney beans (or black beans), drained and rinsed
  • 8 ounces cream cheese
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine ingredients: In a Crockpot, add the chicken breast, kidney beans, cream cheese, diced tomatoes, chicken broth, onion, garlic, chili powder, cumin, salt, and pepper.
  2. Cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours. The chicken should be thoroughly cooked and tender.
