A creamy and flavorful twist on traditional chili, perfect for game days or cozy weeknight dinners.

Ingredients

  • 4 cups cooked chicken, shredded
  • 2 cans white beans, drained and rinsed
  • 1 can diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Sour cream (for topping)
  • Cheese (for topping)
  • Scallions (for topping)
  • Hot sauce (for serving)

Instructions

  1. Sauté the chopped onion and minced garlic in a large pot over medium heat until softened, about 3-5 minutes.
  2. Add the shredded chicken, white beans, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper to the pot. Stir well to combine.
  3. Bring the mixture to a simmer over medium-high heat. Once bubbling, reduce the heat to low and let it cook for 20-25 minutes, allowing all the flavors to meld together.
  4. Serve it hot, topped with sour cream, cheese, scallions, and a drizzle of hot sauce.
  5. Store any leftovers in the freezer for a quick meal later on.

Notes

Use rotisserie chicken for convenience. Adjust spices to taste for your preferred heat level.
