4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour
½ cup buttermilk (or milk mixed with lemon juice)
2 large eggs
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon paprika
1 teaspoon cayenne pepper (optional)
Vegetable oil for frying
Cream gravy (optional, for serving)
Instructions
Prepare the chicken by patting the chicken breasts dry with paper towels. Season each piece generously with salt and pepper.
Make the breading station by whisking together buttermilk and eggs in one bowl, combining flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper in another, and keeping the third bowl empty.
Dredge each chicken breast first into the seasoned flour, then into the buttermilk mixture, and finally back into the flour.
Heat about half an inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
Fry the chicken breasts in the hot oil until golden brown, approximately 5 to 7 minutes on each side until cooked through.
Drain the cooked chicken on a plate lined with paper towels and serve hot with optional cream gravy.
