A comforting soup that combines tender chicken, fresh vegetables, and a creamy broth for a hearty meal.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 medium potatoes, cubed
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened and fragrant.
  2. Cook the chicken: Add the diced chicken to the pot and cook for an additional 5-7 minutes, stirring occasionally, until the chicken is browned on the outside.
  3. Add potatoes and broth: Stir in the cubed potatoes, chicken broth, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender.
  4. Incorporate cream and peas: Lower the heat and stir in the heavy cream and frozen peas. Allow to simmer for another 5 minutes, stirring occasionally.
  5. Taste and serve: Adjust seasoning as needed with salt and pepper. Serve hot in bowls, and enjoy the warm, comforting flavors.

Notes

Feel free to substitute the chicken breast with rotisserie chicken or use a plant-based protein for a vegetarian version. Adjust thickness by simmering uncovered for a thicker soup.
