1 pound boneless chicken breast
1 can (15 oz) white beans (e.g., cannellini or Great Northern)
1 medium onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 can (4 oz) diced green chilies
1 cup chicken broth
1 cup heavy cream or sour cream
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup corn (frozen or canned)
Shredded cheese, cilantro, avocado, lime wedges, for topping
Instructions
Cook the chicken: In a large pot, cook the chicken over medium heat until it is no longer pink, about 7-8 minutes. Remove from the pot and shred the chicken with two forks.
Combine ingredients: Add the shredded chicken back to the pot, along with the white beans, chicken broth, diced green chilies, cumin, chili powder, salt, and pepper. Stir to combine.
Simmer: Bring the mixture to a simmer and let cook for 20 minutes, stirring occasionally.
Add corn and cream: Stir in the corn and heavy cream (or sour cream) for added richness. Cook for an additional 5 minutes until heated through.
