A warm and comforting dish featuring tender chicken, creamy white beans, and a hint of spice, perfect for chilly evenings.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1/2 cup chopped cilantro (for garnish)

Instructions

  1. Sauté the chopped onion and minced garlic over medium heat until translucent, about 3-4 minutes.
  2. Sear the chicken breasts in the pot until lightly browned on both sides, about 5 minutes.
  3. Combine the chicken broth and add the white beans, corn, cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
  5. Shred the chicken and return it to the pot.
  6. Add the sour cream and stir until well combined.
  7. Serve hot, garnished with chopped cilantro.

Notes

For a lighter option, substitute chicken with turkey or skip the sour cream for a dairy-free version. Adjust spices to taste, and feel free to add additional vegetables.
