Boo Brownies are a fun and delicious treat topped with fluffy marshmallow buttercream ghosts, perfect for Halloween or any festive gathering.

Ingredients

  • 1 cup vegetable oil
  • 1 cup all-purpose flour
  • 2 cups + 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 2/3 cup unsweetened cocoa powder
  • 2 large eggs
  • 2/3 cup whole milk
  • 1 cup American buttercream
  • 2 cups marshmallow creme
  • Black American buttercream for decoration

Instructions

  1. Preheat the oven to 375°F (190°C). Grease and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Mix the sugar, all-purpose flour, cocoa powder, salt, and baking powder until well combined.
  3. Combine the vegetable oil, whole milk, vanilla extract, and eggs to the flour mixture. Whisk until smooth.
  4. Pour the brownie batter into the prepared pan and spread evenly. Bake for 25 – 30 minutes, until a toothpick comes out with a few moist crumbs.
  5. Allow the brownies to cool completely in the pan on a wire rack before decorating.
  6. Make the marshmallow buttercream by combining American buttercream with marshmallow creme until fluffy.
  7. Use piping bags to pipe marshmallow buttercream ghosts on top of the cooled brownies and decorate with black buttercream eyes.

Notes

Don’t overmix the batter and ensure the brownies cool completely before frosting for best results.
