A comforting classic, this creamy, cheesy Broccoli Cheddar Soup is quick to make and perfect for busy nights or a relaxing weekend treat.

Ingredients

  • 2 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Sauté onion and garlic: In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing for about 3 minutes until fragrant.
  2. Add broccoli: Toss in the broccoli florets and sauté for another 3-4 minutes until they start to soften.
  3. Simmer the broth: Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10-15 minutes until the broccoli is tender.
  4. Blend until smooth: Use an immersion blender to puree the soup until it reaches a creamy texture. Alternatively, transfer the mixture to a blender in batches if you don’t have an immersion blender.
  5. Add cream and cheese: Stir in the heavy cream, grated cheddar cheese, salt, pepper, and nutmeg. Let it cook for an additional 5 minutes, stirring frequently, until the cheese melts and the soup is creamy.
  6. Serve hot: Ladle the soup into bowls and enjoy it fresh.

Notes

For a lighter option, substitute heavy cream with half-and-half or plant-based cream. You can customize with additional veggies or proteins if desired.
