Broccoli Potato Cheese Soup

A creamy and comforting broccoli potato cheese soup, perfect for any time of year and easy enough for beginner cooks.

Ingredients

  • 2 cups broccoli florets
  • 2 cups diced potatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sauté the diced onion and minced garlic in olive oil over medium heat until soft and fragrant, about 3–4 minutes.
  2. Add the diced potatoes and cook for about 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for about 10 minutes, until potatoes are tender.
  4. Add broccoli florets and continue cooking for 5 minutes, until tender.
  5. Use an immersion blender to puree the soup to your desired consistency.
  6. Stir in the milk and cheddar cheese, cooking until the cheese has melted.
  7. Season with salt and pepper to taste, then serve hot with your favorite bread.

Notes

For a chunkier soup, blend only half. Feel free to customize with different vegetables or spices.
