A comforting and flavorful Caribbean dish featuring tender chicken simmered in a savory broth with vibrant vegetables.

Ingredients

  • 4 chicken thighs (skin-on, bone-in)
  • 2 tablespoons soy sauce
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 2 carrots, sliced
  • 2 tomatoes, chopped
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Marinate the chicken: In a large bowl, toss the chicken thighs with soy sauce, salt, and pepper. Let them marinate for at least 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and brown them on all sides, about 5-7 minutes per side.
  3. Remove the chicken from the pot and set aside.
  4. Add the sliced onions, minced garlic, grated ginger, sliced bell pepper, and carrots to the pot. Sauté for about 5-6 minutes until softened.
  5. Stir in the chopped tomatoes, thyme, allspice, and chicken broth. Scrape the bottom of the pot.
  6. Return the browned chicken to the pot, cover it, and let it simmer for about 40 minutes.
  7. Serve the Brown Stew Chicken hot, preferably with rice and peas.

Notes

Allow the chicken to marinate for full flavor and monitor the heat to prevent burning the vegetables.
