Cheesy Ground Beef and Rice Casserole

A comforting casserole that combines ground beef, rice, and cheese for a satisfying family dinner.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Brown the beef in a skillet over medium heat with the diced onion for 5-7 minutes. Drain excess fat.
  3. Add the minced garlic and sauté for an additional 30 seconds.
  4. Make the sauce by whisking together the cream of mushroom soup, milk or broth, paprika, salt, and pepper.
  5. Assemble the casserole by mixing the cooked rice, beef mixture, half of the cheese, and the sauce.
  6. Top with the remaining cheese, cover with foil, and bake for 20 minutes.
  7. Finish baking by removing the foil and baking for an additional 10 minutes until bubbly and golden.
  8. Serve with optional chopped parsley for garnish.

Notes

Let the casserole rest for 5-10 minutes before serving for cleaner portions.
