A comforting chicken broth recipe perfect for sipping or as a base for soups and stews.

Ingredients

  • 1 whole chicken (about 4-5 pounds) or 2-3 pounds of chicken bones
  • 4 quarts of cold water
  • 2 medium onions
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 10-12 peppercorns
  • 2 tablespoons of apple cider vinegar

Instructions

  1. Prepare the ingredients: Start by washing and chopping the vegetables into rough chunks.
  2. Combine in a pot: Place the chicken (or bones) in a large stockpot with the chopped onions, carrots, celery, garlic, bay leaf, and peppercorns.
  3. Add water and vinegar: Pour in the cold water and add the apple cider vinegar.
  4. Bring to a boil: Set the pot over high heat and bring to a boil.
  5. Skim the foam: After about 30 minutes, skim any foam forming on the surface.
  6. Simmer gently: Let the broth simmer for 4 hours; add water if it reduces too much.
  7. Strain the broth: Carefully remove the chicken and strain the broth through a fine mesh sieve into a large bowl.
  8. Cool and store: Allow the broth to cool completely before transferring to storage containers.

Notes

Use quality ingredients for the best flavor, and don’t rush the simmering process for a richer broth.
