One Pot Chicken Potato Soup

A cozy, satisfying dish featuring tender chicken, hearty potatoes, and a blend of vegetables, perfect for busy weeknights or lazy weekends.

Ingredients

  • 1 pound boneless, skinless chicken breast, diced
  • 2 medium Yukon Gold potatoes, peeled and diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and diced chicken. Cook for about 5-7 minutes until the chicken is browned.
  3. Add the diced potatoes, chicken broth, dried thyme, bay leaf, salt, and pepper. Stir to combine.
  4. Bring the pot to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until potatoes are tender.
  5. Remove the bay leaf. Taste and adjust seasoning as necessary. Ladle the soup into bowls and garnish with fresh parsley.

Notes

Cut ingredients evenly for even cooking. Adjust thickness as desired by mashing some potatoes.
