A warm and comforting soup that combines the classic flavors of chicken pot pie in a hearty and easy-to-make dish.

Ingredients

  • 1 lb cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1 cup peas
  • 1/2 cup onions, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup flour

Instructions

  1. Sauté the vegetables by melting the butter in a large pot over medium heat, then adding the onions, carrots, and potatoes. Sauté for about 5 minutes.
  2. Stir in the flour and cook for about a minute until combined with the vegetables.
  3. Add the chicken broth gradually while stirring continuously to avoid lumps, then bring to a boil.
  4. Mix in the chicken, peas, thyme, salt, and pepper once boiling, stirring well.
  5. Finish by pouring in the heavy cream and letting it simmer for 10-15 minutes until thickened.
  6. Serve the soup in bowls and enjoy it hot.

Notes

Use fresh vegetables for the best flavor. Adjust the thickness by simmering longer or adding more broth.
