Ingredients
2 cups cooked shredded chicken
4 medium potatoes, diced
2 large carrots, sliced
1 onion, chopped
4 cups chicken broth
1 cup heavy cream
2 tablespoons butter
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Sauté the butter in a large pot over medium heat. Add the chopped onion and sliced carrots. Sauté for about 5 minutes, until they start to soften.
Add the diced potatoes and pour in the chicken broth. Increase the heat and bring the mixture to a boil.
Simmer once boiling, reduce the heat to a simmer. Cook for about 15 minutes or until the potatoes are tender when pierced with a fork.
Stir in the cooked shredded chicken and heavy cream to the pot. Season with salt and pepper to taste. Stir well to combine, and continue to simmer for an additional 5–10 minutes until heated through.
Garnish the soup with fresh parsley before serving hot.
Notes
Using rotisserie chicken can save you time. Adjust the thickness with more or less cream based on preference.
