A comforting and creamy chicken potato soup that’s perfect for chilly evenings and family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups potatoes, diced
  • 1 cup bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 4 cups chicken broth (low sodium recommended)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings.
  2. Sauté onion and garlic in the bacon fat for 3-4 minutes until translucent.
  3. Add potatoes and chicken broth, and bring to a boil over medium-high heat.
  4. Reduce heat to a simmer and cook for 15-20 minutes until potatoes are tender.
  5. Stir in the shredded chicken and mixed vegetables.
  6. Pour in the heavy cream and stir to combine.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with crispy bacon and fresh parsley.
