A comforting, hearty chicken stew perfect for sharing, packed with tender chicken, flavorful vegetables, and a savory broth.

Ingredients

  • 1 pound of chicken (thighs or breasts)
  • 2 cups of mixed vegetables (carrots, peas, potatoes)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of cornstarch (optional for thickening)

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent and fragrant, about 3-4 minutes.
  2. Brown the chicken: Add the chicken to the pot and cook until browned on all sides, approximately 5-7 minutes.
  3. Add vegetables and broth: Stir in the mixed vegetables, chicken broth, dried thyme, paprika, salt, and pepper. Mix well to combine all ingredients.
  4. Simmer until cooked: Bring the mixture to a boil. Reduce the heat to low and let it simmer for 30-40 minutes, or until the chicken is cooked through and tender.
  5. Thicken the stew: Mix the cornstarch with a little cold water to create a slurry. Stir it into the stew and cook for an additional 5 minutes until thickened to your liking.
  6. Serve and enjoy: Remove from heat, ladle the stew into bowls, and enjoy the comforting flavors.
