A fun and delightful dish combining fresh vegetables with melted cheese, perfect for quick dinners or appetizers.

Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers. Sauté until softened, about 5 minutes.
  2. Add corn: Stir in the corn and cook for another 2-3 minutes. Season the mixture with salt and pepper to taste.
  3. Cool slightly: Remove the vegetable mixture from heat and let it cool slightly.
  4. Assemble the quesadillas: Place a tortilla in the skillet over low heat, sprinkle cheese on one half, then add a scoop of the corn mixture on top.
  5. Fold and cook: Fold the tortilla over, cooking until golden brown and the cheese is melted, about 2-3 minutes per side.
  6. Repeat the process with remaining tortillas.
  7. Serve: Cut cooked quesadillas into wedges and serve warm.

Notes

For a spicy kick, consider adding jalapeños or red pepper flakes. Don’t overcrowd the pan for even browning.
