Ingredients
4 cups chicken broth
2 cups cooked, shredded chicken
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 cup milk
1/4 cup butter (melted)
Instructions
Heat the broth: In a large pot, bring 4 cups of chicken broth to a boil. Once boiling, add 2 cups of shredded chicken and then reduce the heat to low.
Prepare the dumpling mixture: In a separate mixing bowl, combine 1 cup all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon onion powder. Mix these ingredients well.
Make the dumpling dough: Stir in 1/4 cup of milk and 1/4 cup of melted butter into the dry mixture until a sticky dough forms.
Drop the dumplings: Scoop spoonfuls of the dough and drop them gently into the simmering broth.
Simmer to cook: Cover the pot and let the dumplings simmer for about 15 to 20 minutes until puffed up and cooked through.
Notes
Use fresh ingredients for the best flavor. Monitor the heat to keep the broth at a gentle simmer.
