A delightful dish with a crispy, cheesy crust and tender chicken, perfect for any weeknight dinner or weekend gathering.

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup shredded provolone cheese (or mozzarella)
  • ¼ cup panko breadcrumbs
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon fresh parsley (chopped, optional for garnish)

Instructions

  1. Prepare the chicken: Lightly pound the chicken breasts so they cook evenly.
  2. Season: Rub both sides of the chicken with olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
  3. Cook the chicken: Heat a skillet or grill pan over medium-high heat. Sear the chicken for 4 to 5 minutes on each side, until golden brown and cooked through, reaching an internal temperature of 165°F (74°C). Transfer the chicken to a baking dish.
  4. Make the Parmesan topping: In a bowl, mix together mayonnaise, sour cream, Parmesan cheese, provolone cheese, and panko breadcrumbs until it forms a thick, spreadable mixture.
  5. Spread the topping: Preheat your oven broiler. Evenly spread the cheesy mixture over each piece of chicken.
  6. Broil to finish: Place the baking dish under the broiler for 2 to 3 minutes, or until the topping is bubbly and lightly golden.
  7. Serve and enjoy: Garnish with fresh parsley if desired. Serve hot with your choice of sides.
