Cowboy Butter Chicken Pasta

A comforting dish combining tender chicken, creamy butter chicken sauce, and pasta, perfect for busy weeknight dinners.

Ingredients

  • 8 oz fusilli or penne pasta
  • 1 lb chicken breast, diced
  • 2 tbsp butter
  • 1 cup butter chicken sauce
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Boil a pot of salted water and cook the pasta according to package instructions. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat until bubbly but not browned.
  3. Add the diced chicken to the skillet and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
  4. Pour in the butter chicken sauce and bring to a simmer. Cook for a few minutes to meld flavors.
  5. Reduce heat to low, then stir in the heavy cream and grated Parmesan cheese until the cheese melts and the sauce is creamy.
  6. Toss the drained pasta into the skillet with the sauce and chicken and stir well to coat the pasta.
  7. Taste and season with salt and pepper as needed.
  8. Serve hot, garnished with fresh cilantro on top.

Notes

You can substitute chicken breast with boneless thighs for a juicier option, and for a lighter version, use low-fat cream or omit the cheese.
