Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups cooked pasta or rice (optional)
  • 2 cups leafy greens (such as spinach or kale, optional)

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5 to 7 minutes.
  2. Add garlic: Stir in the minced garlic and cook for another minute, until fragrant.
  3. Introduce the liquid: Add the broth, diced tomatoes, thyme, basil, salt, and pepper. Bring the mixture to a boil.
  4. Simmer the soup: Reduce the heat and let the soup simmer for about 20 minutes, allowing the flavors to meld together.
  5. Incorporate optional ingredients: If using, add cooked pasta or rice and leafy greens in the last 5 minutes of cooking to heat through.
