Creamy Chipotle Chicken Pasta

A quick and easy creamy pasta dish with smoky chipotle flavors, perfect for weeknight dinners or special occasions.

Ingredients

  • 1/2 lb. fettuccine
  • 1 lb. chicken breast (cut into cubes)
  • 1/2 tsp salt (divided)
  • 1/2 tsp black pepper (divided)
  • 2 tbsp chipotle in adobo sauce
  • 1 tbsp honey
  • 1/2 cup yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 (15 oz.) can diced tomatoes
  • 1 cup heavy cream
  • 1 tbsp butter
  • 1 tbsp oil
  • 1/2 cup corn (frozen)
  • 1/4 cup mozzarella cheese (grated)
  • 1/4 cup parmesan cheese (grated)
  • Fresh parsley (chopped for garnish)
  • Extra parmesan for garnish

Instructions

  1. Season the chicken: In a bowl, season the chicken cubes with 1/4 tsp salt, 1/4 tsp pepper, and honey, tossing to coat them evenly.
  2. Cook the chicken: Heat a large skillet over medium heat. Add the oil and butter. Once hot, add the seasoned chicken to the skillet, turning occasionally until golden on all sides, about 7-10 minutes. Remove the chicken and set aside.
  3. Sauté onions and garlic: In the same skillet, add the chopped onions. Cook until they soften, about 7 minutes. Add the minced garlic, diced tomatoes, chipotle sauce, and the remaining salt and pepper. Cover and let the mixture simmer for about 10 minutes.
  4. Cook the pasta: While the sauce simmers, bring a large pot of salted water to a boil. Cook the fettuccine according to package directions for al dente. Reserve about 1/2 cup of the pasta water before draining.
  5. Combine ingredients: Add the cooked chicken and frozen corn to the skillet. Pour in the heavy cream, mozzarella, and parmesan cheese. Stir and let simmer for another 5 minutes, ensuring everything is heated through and the sauce thickens slightly.
  6. Mix with pasta: Gently toss the cooked fettuccine into the creamy chipotle sauce. If the sauce seems too thick, add a little reserved pasta water until you reach your desired consistency.
  7. Garnish and serve: Serve immediately, topping with chopped parsley and a sprinkle of extra parmesan for added flavor.

Notes

Adjust spice level by modifying chipotle sauce to taste. Don’t forget to reserve pasta water for the right sauce consistency.
