A comforting and creamy slow-cooked chicken wild rice soup, perfect for chilly evenings.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup wild rice, rinsed
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Combine all ingredients into a crockpot, including chicken, wild rice, chicken broth, water, carrots, celery, onion, garlic, thyme, and parsley. Season with salt and pepper.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is fully cooked and rice is tender.
  3. Add heavy cream about 30 minutes before serving, stirring to blend.
  4. Serve hot, garnished with fresh herbs if desired.

Notes

For a lighter option, substitute heavy cream with half-and-half or a dairy-free alternative like coconut milk.
