A comforting dish combining tender chicken, savory mushrooms, and a rich, velvety sauce, perfect for busy weeknights or family dinners.

Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet. Cook until browned, about 6-7 minutes on each side, then remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sliced mushrooms. Sauté until the mushrooms are softened and golden, approximately 5 minutes.
  3. Pour in the heavy cream and stir in thyme. Bring the mixture to a gentle simmer, ensuring it doesn’t boil.
  4. Return the chicken to the skillet, allowing it to cook in the sauce for an additional 5-10 minutes until the sauce thickens and the chicken is cooked through.
  5. Plate the creamy mushroom chicken over a generous serving of mashed potatoes, spooning extra sauce on top.

Notes

For a lighter dish, substitute heavy cream with half-and-half or a mixture of milk and butter. Fresh herbs can enhance the flavor.
