A delightful dish that pairs tender chicken breasts with a rich, creamy pesto sauce and roasted tomatoes, perfect for quick weeknight meals.

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup pesto sauce
  • Parmesan cheese for garnish

Instructions

  1. Heat the skillet by warming the olive oil over medium heat.
  2. Sear the chicken breasts with salt and pepper until golden brown on both sides, approximately 6-7 minutes per side.
  3. Set aside the chicken by removing it from the skillet and covering it with foil.
  4. Make the sauce by adding heavy cream and pesto to the same skillet, stirring until heated through, about 2-3 minutes.
  5. Combine the chicken back into the skillet, ensuring it’s well coated in the sauce.
  6. Serve the dish hot, garnished with Parmesan cheese.

Notes

Store-bought pesto can be used, but fresh pesto offers the best flavor. Use boneless, skinless chicken breasts for quick cooking, and freshly grated Parmesan enhances the dish.
