A rich and velvety soup packed with flavor, perfect for chilly evenings and easy weeknight dinners.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chives or parsley for garnish

Instructions

  1. Sauté the onion: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Cook the potatoes: Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
  3. Blend until smooth: Using an immersion blender, puree the soup in the pot until smooth.
  4. Stir in cream: Return the soup to low heat and stir in the heavy cream. Season to taste with salt and pepper.
  5. Serve and garnish: Ladle the soup into bowls and garnish with chopped chives or parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half. Add vegetables like carrots or celery for extra nutrition.
