A quick and easy creamy salmon pasta dish perfect for busy weeknights, packed with flavor and nutrients.

Ingredients

  • 8 ounces fettuccine (or your pasta of choice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillets
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta and set aside.
  2. Prepare the Skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Cook the Salmon: Season the salmon fillets with salt and pepper. Push the garlic to the side of the skillet and place the salmon skin-side down in the pan. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
  4. Make the Creamy Sauce: In the same skillet, lower the heat and pour in the heavy cream. Stir continuously for 2-3 minutes until the cream begins to thicken slightly.
  5. Add the Cheese: Gradually stir in the Parmesan cheese, lemon juice, and some of the reserved pasta water to adjust the sauce’s consistency if needed. Season with additional salt and pepper to taste.
  6. Combine Pasta and Salmon: Add the cooked fettuccine to the skillet, tossing to coat evenly in the sauce. Flake the cooked salmon into large pieces, and gently fold them into the pasta.
  7. Garnish and Serve: Serve the pasta warm, garnished with fresh dill or parsley.

Notes

Avoid overcooking the salmon to prevent a dry texture. Use fresh ingredients for the best flavor.
