A delicious and comforting dish combining tender chicken, creamy goodness, sun-dried tomatoes, and fresh spinach, perfect for family dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Pasta, rice, or mashed potatoes for serving

Instructions

  1. Prepare the chicken: In your slow cooker, lay the chicken breasts evenly at the bottom. Sprinkle the minced garlic, chopped sun-dried tomatoes, Italian seasoning, salt, and pepper over the chicken.
  2. Add the cream: Pour in the heavy cream, ensuring the chicken is well coated with the sauce for maximum flavor.
  3. Cook low and slow: Set your slow cooker to cook on low for 240 to 360 minutes. The chicken should become tender and easily shred with a fork.
  4. Incorporate greens and cheese: Approximately 30 minutes before serving, stir in the fresh spinach and grated parmesan cheese. This allows the spinach to wilt and the cheese to melt, enriching the sauce.
