A comforting and creamy soup made with hearty wild rice and earthy mushrooms, perfect for cozy dinners or meal prepping.

Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnishing)

Instructions

  1. Rinse the wild rice under cold water in a fine mesh strainer to remove excess starch.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until translucent, about 5 minutes.
  3. Add the sliced mushrooms to the pot. Cook them until they release their moisture and start to brown, stirring occasionally, for about 5-7 minutes.
  4. Stir in the rinsed wild rice, vegetable broth, dried thyme, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45 minutes or until the wild rice is tender.
  6. Stir in the heavy cream or coconut milk and cook for an additional 5 minutes, heating through.
  7. Taste and adjust seasoning as needed. Serve the soup hot, garnished with fresh parsley.

Notes

Be sure to rinse the wild rice to prevent clumping and sauté the onions and mushrooms thoroughly for a deeper flavor.
