A comforting and hearty slow-cooked beef stew, perfect for chilly weather, featuring tender beef and nutritious vegetables in a rich broth.

Ingredients

  • 2 lbs beef chuck, cut into bite-sized pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Place the beef in the slow cooker. Make sure the pieces are uniformly cut, so they cook evenly.
  2. Add the sliced carrots, cubed potatoes, chopped onion, and minced garlic to the beef.
  3. In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Combine well to ensure the tomato paste dissolves completely.
  4. Pour the mixture over the beef and vegetables in the slow cooker, ensuring everything is well coated.
  5. Cover and cook on low for 480 minutes (8 hours) or high for 240 minutes (4 hours), until the beef is tender and the flavors are melded.
  6. Once cooked, serve warm. Enjoy the comforting flavors and aromas!

Notes

Consider searing the beef before adding it to the slow cooker for enhanced flavor. Adjust seasonings before serving.
