A comforting dish featuring tender chicken, hearty vegetables, and fluffy dumplings, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup sliced carrots
  • 1 cup frozen peas
  • 1 onion, chopped
  • 2 cups biscuits (store-bought or homemade)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the crock pot and season with salt, pepper, garlic powder, and thyme.
  2. Add the broth and soup: Pour in the chicken broth and add the cream of chicken soup. Mix well to combine with the chicken.
  3. Incorporate the vegetables: Add the chopped onions, sliced carrots, and frozen peas into the pot. Stir everything together until evenly distributed.
  4. Cook: Cover the crock pot and set it to low. Cook for 6-8 hours until the chicken is thoroughly cooked and easy to shred.
  5. Shred the chicken: Once cooked, use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the pot and stir.
  6. Add the dumplings: Cut the biscuits into quarters and gently fold them into the chicken mixture in the crock pot.
  7. Final cook: Cover and cook on high for an additional 30-40 minutes, or until the dumplings are cooked through and fluffy.
  8. Serve and enjoy: Dish out warm servings of the chicken and dumplings, and enjoy the comforting flavors.

Notes
