A comforting soup that delivers the rich flavors of chicken pot pie in a creamy format, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup peas
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup biscuit dough (optional)

Instructions

  1. Combine Ingredients: In a crock pot, add the diced chicken, carrots, celery, peas, onion, chicken broth, thyme, garlic powder, salt, and pepper. Stir gently to combine.
  2. Cook: Cover the crock pot and cook on low for 6-8 hours or on high for 4-5 hours. The chicken should be cooked through, and the vegetables should be tender.
  3. Add Cream: About 30 minutes before you’re ready to serve, stir in the heavy cream.
  4. Optional Biscuit Dough: If using biscuit dough, cut it into small pieces and add them to the soup during the last 30 minutes of cooking.
  5. Serve: Once done, serve warm and enjoy!
