A comforting, easy weeknight dinner featuring tender chicken in a creamy ranch sauce with colorful vegetables, perfect for busy days.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 cup cream of chicken soup
  • 1/2 cup chicken broth
  • 1 cup frozen mixed vegetables (carrots, peas, corn, green beans)
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts into the Crock Pot, laying them flat for even cooking.
  2. In a separate bowl, combine the ranch seasoning, cream of chicken soup, and chicken broth. Stir until the mixture is well blended.
  3. Pour the sauce evenly over the chicken in the Crock Pot.
  4. Sprinkle the frozen mixed vegetables on top of the chicken and sauce mixture.
  5. Cover the Crock Pot and cook on low for 360-480 minutes or on high for 180-240 minutes, until the chicken is thoroughly cooked and tender.
  6. About 15 minutes before serving, stir in the shredded cheddar cheese until melted and well incorporated.
  7. Season with salt and pepper to taste before serving over rice, pasta, or on its own.

Notes

The ranch seasoning adds delightful flavor. Use low-sodium cream of chicken soup for less salt. Fresh vegetables can be substituted; adjust cooking time accordingly.
