A delightful slow-cooked dish combining zesty ranch and taco seasoning with tender chicken and hearty beans, perfect for busy days.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 1 packet taco seasoning mix
  • 1 cup chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can diced green chilies

Instructions

  1. Place the boneless, skinless chicken breasts in your crock pot. Make sure they are spread out evenly for even cooking.
  2. In a separate bowl, combine the ranch dressing mix, taco seasoning mix, and chicken broth. Whisk until well blended.
  3. Carefully pour the seasoning mixture over the chicken breasts in the slow cooker, ensuring they are evenly coated.
  4. Top the mixture with the black beans, corn, diced tomatoes, and diced green chilies. Do not stir; just layer the ingredients.
  5. Cover the crock pot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked and tender enough to shred.
