A creamy, hearty potato soup made effortlessly in a slow cooker, perfect for cozy family dinners.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. Combine the diced potatoes, chopped onion, minced garlic, and broth in a slow cooker.
  2. Cover and cook on low for 4 hours or until the potatoes are tender.
  3. Mash some of the potatoes directly in the pot for a creamy texture.
  4. Stir in the heavy cream, cheddar cheese, sour cream, crumbled bacon, salt, and pepper until well combined.
  5. Cover and cook for an additional 30 minutes until everything is heated through.
  6. Serve the soup into bowls and garnish with chives if desired.

Notes

Choose starchy potatoes like Russet or Yukon Gold for a creamier soup. Adjust thickness by mashing more potatoes or adding broth.
