A unique and hearty chili combining pumpkin, beans, and spices, perfect for fall or anytime you crave comfort food.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 can pumpkin puree
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Brown the meat in a skillet over medium heat until fully cooked, then transfer to the Crock Pot.
  2. Sauté the chopped onion and minced garlic in the same skillet for about 3-4 minutes until softened.
  3. Combine the sautéed onion and garlic in the Crock Pot with pumpkin puree, both types of beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Add the vegetable broth and mix all ingredients thoroughly.
  5. Cook on low for 6-8 hours or on high for 3-4 hours until heated through and flavors melded.
  6. Serve hot with your favorite toppings.
