Crockpot Chicken and Dumplings is the ultimate comfort food that brings together tender chicken, fluffy dumplings, and a medley of vegetables simmered in a flavorful broth.

Ingredients

  • 1.5 lbs chicken breasts
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 can refrigerated biscuit dough

Instructions

  1. Combine the chicken breasts, chicken broth, chopped onion, minced garlic, mixed vegetables, dried thyme, dried parsley, salt, and pepper in a slow cooker. Stir gently to mix everything evenly.
  2. Set the slow cooker to cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is cooked through and tender.
  3. Add the biscuit dough and cut each biscuit into quarters, gently dropping them into the slow cooker about 30 minutes before serving.
  4. Finish cooking until the dumplings are puffed and cooked through, about 30 minutes.

Notes

You can substitute chicken thighs for breasts for extra moisture and flavor. When reheating, add a splash of broth to restore moisture and fluffiness to the dumplings.
