Crockpot Chicken and Dumplings

A comforting dish of tender chicken and fluffy dumplings, perfectly cooked in a slow cooker.

Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup frozen peas (optional)
  • 1 package biscuit dough (pre-packaged)

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of your crockpot.
  2. Add the veggies: Top the chicken with diced onion, sliced carrots, and celery.
  3. Season well: Sprinkle in the garlic powder, onion powder, thyme, salt, and pepper.
  4. Combine liquids: Pour in the chicken broth and cream of chicken soup. Stir gently until combined.
  5. Set it and forget it: Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  6. Shred the chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.
  7. Add peas: Stir in the frozen peas, if using, for color and sweetness.
  8. Top with dumplings: Cut the biscuit dough into quarters, and place the pieces on top of the mixture to form dumplings.
  9. Cook dumplings: Cover and cook on high for an additional 1-2 hours, or until the biscuits are fully cooked and fluffy.
  10. Serve hot: Once done, serve hot and enjoy the comforting flavors!

Notes

For best results, avoid overcrowding the crockpot to allow dumplings to expand.
