Crockpot Chicken Noodle Soup

A comforting dish featuring tender chicken, hearty vegetables, and egg noodles, perfect for busy nights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the Crockpot.
  2. Pour in the chicken broth, and add the sliced carrots, celery, chopped onion, minced garlic, bay leaves, thyme, salt, and pepper. Stir gently to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Remove the chicken from the Crockpot and shred it with two forks.
  5. Return the shredded chicken to the soup, and add the egg noodles. Cook on high for an additional 30 minutes, or until the noodles are tender.
  6. Remove the bay leaves, garnish with fresh parsley, and serve warm.

Notes

Feel free to swap chicken broth for vegetable broth for a lighter flavor, and add other vegetables like peas or green beans for added nutrients.
