A comforting dish that combines tender chicken breasts with flavorful garlic and creamy Parmesan, all cooked together with baby potatoes in a slow cooker.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cups baby potatoes, halved
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped parsley for garnish

Instructions

  1. Prepare the sauce: In a large bowl, mix together the chicken broth, minced garlic, Italian seasoning, salt, and pepper.
  2. Add the chicken: Place the chicken breasts in the slow cooker and pour the garlic mixture over them.
  3. Add the potatoes: Add the halved baby potatoes on top of the chicken.
  4. Drizzle olive oil: Drizzle the olive oil over the top of the chicken and potatoes.
  5. Cook the dish: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  6. Add cheese: In the last 30 minutes of cooking, sprinkle the Parmesan cheese over the chicken and potatoes.

For best flavor, use fresh garlic and adjust Parmesan based on preference. You can also substitute chicken breasts with thighs for a richer taste.
