A comforting dish perfect for busy weeknights with tender chicken, hearty egg noodles, and a sweet and savory honey-garlic sauce.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup chicken broth
  • 8 oz egg noodles
  • 1 tablespoon cornstarch (optional)
  • Green onions, chopped (for garnish)

Instructions

  1. Add chicken breasts to the bottom of the crockpot.
  2. Mix honey, soy sauce, minced garlic, and grated ginger in a small bowl.
  3. Pour the honey-garlic mixture over the chicken breasts.
  4. Add chicken broth to keep the chicken moist.
  5. Set the cooker to low for 6-7 hours or high for 3-4 hours.
  6. Shred the cooked chicken using two forks and return it to the pot.
  7. Cook the egg noodles in a separate pot according to the package instructions.
  8. Combine the cooked noodles with the chicken in the crockpot.
  9. Optional: Dissolve cornstarch in water and stir into the mixture for thickening.
  10. Garnish with chopped green onions before serving.

Notes

You can substitute chicken thighs for breasts and use tamari for a gluten-free option.
