Ingredients
2 cups cooked chicken, shredded
1 can (15 oz) sweet corn, drained
1 can (15 oz) white beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1 cup pepper jack cheese, shredded
Instructions
Combine the shredded chicken, sweet corn, white beans, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper in a slow cooker.
Mix everything together until well combined.
Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
Add the shredded pepper jack cheese about 30 minutes before serving.
Serve hot, garnished with your favorite toppings.
