A comforting chicken noodle soup perfect for any day, combining tender chicken, wholesome vegetables, and egg noodles for a family favorite.

Ingredients

  • 4 boneless skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. Layer the chicken: Place the chicken breasts at the bottom of the crockpot.
  2. Add vegetables and seasoning: Pour in the chicken broth, then add the sliced carrots, celery, chopped onion, minced garlic, thyme, oregano, salt, and pepper.
  3. Cook: Cover the crockpot and cook on low for 6 to 8 hours, or until the chicken is cooked through and tender.
  4. Shred the chicken: Carefully remove the cooked chicken from the crockpot and shred it into bite-sized pieces.
  5. Combine chicken with soup: Return the shredded chicken back into the pot.
  6. Add egg noodles: Stir in the egg noodles and cover. Cook for an additional 30 minutes or until the noodles are cooked through.
